Sourced exclusively from the small family run Ablington Vineyard. It was pressed straight to barrel and allowed to ferment using the native yeast of the vineyard, helping to add another dimension to the wine. Aged for 9 months on lees in old French oak barriques to show the true expression

This wine expresses rich dark fruits, blackberry, cassis, mocha and white pepper flavours with a lengthy velvety finish. Cluster ferment was used to create depth and structure while the delux French Oak adds spice and silky tannins.
Hand harvested fermented in open pots using the native yeast of the vineyard which helps to add another dimension and greater complexity to the wine. The wine was aged for 18 months on lees in a mixture of new and old French oak barriques to be a beautiful Cabernet Sauvignon.
