A herbal white wine, the classic Sauvignon Blanc has nuances of thyme, bellpepper and gooseberry. It grows well on Bordeaux's gravelly soils, and is blended with Semillion to produce Bordeaux Blancs. Besides France, Sauvignon Blanc is also grown in New Zealand's Marlborough. Pungently aromatic, New Zealand's Sauvignon Blancs have intense gooseberry and asparagus flavours. It set Marllborough on the world wine map, and was established as New Zealand's flagship wine.
Due to Sauvignon Blanc's herbaceous notes, it pairs well with similar green herbs like parsely, rosemary, basil and mint. Sauvignon Blanc goes well with white meat and vegetarian fare.
