Very deep purple-black in color, it needs a little coaxing to begin, slowly unfurling to reveal a fragrant perfume of violets, chocolate-covered cherries, crushed blueberries and eucalyptus over a core of preserved plums, kirsch, black raspberries and crème de cassis plus hints of licorice and chargrilled meat. Full-bodied and built like a brick house, it has a solid foundation of firm, super ripe, grainy tannins and seamless freshness interknit with the black fruit preserves and minerally layers, finishing very long and very decadent.

The 42-hectare St. Emilion vineyard of Chateau Pavie is truly three unique and different terroirs. Each also has its own micro-climate. In the terroir, there exist serious layers of limestone, deep clay deposits of clay and at the lower portion of the vineyards, you find sand, clay and gravel soil. Part of the goal at Chateau Pavie is to produce wine from ripe grapes and low yields using sustainable, vineyard management techniques. Chateau Pavie is a unique style of Bordeaux wine that is deep in colour. In fact, it is often opaque in the best years. The wine that comes out of Chateau Pavie is rich and filled with minerality, showing the unique purity of fruit.

Saint-Emilion is a charming medieval village located in the heart of the famous Bordeaux wine area. It is a unique site where world-famous wineries, beautiful architecture and great monuments can be found. The legend tells a story about a monk, Emilion, from Brittany who fled from his hometown in Vannes to seek refuge in the eighth century. Living the life of a hermit, he accomplished a few miracles and rapidly became famous in the region and even far beyond its border. Even after his death his followers carried on his legacy and even named the town after his name. From the ninth century to the 19th century, men had the will to mine the soil in order to standardise the whole architectural looking of not only the city of Saint-Emilion but also a few ones in the region (such as Right Banc Bordeaux).
